COTTAGE CHEESE PIE


Call it a cheese cake or pie,this is one of the best bakes you can invest your time in.Keep all the ingredients wholesome without loosing on the taste.Without any further ado, I present the ingredient list for this most awesome cottage cheese pie.

For the crust:

130 gm (1 cup) whole wheat four

100 gm (1/2 cup) butter

1 egg yolk

1 1/2 tbsp thick cream

3 tbsp brown sugar

1/4-1/2 tsp salt

1 tsp baking soda +1/2 tbsp lemon juice or vinegar

For the filling:

500 gm cottage cheese(you will get this from about 3 ltr milk)

2 tbsp semolina(optional, it stabilizes the filling)

2 egg yolks

250 gm brown sugar

3 egg whites

orange/lemon rind for flavour

100 gm re-hydrated raisins(optional)

1.For the crust, combine all the ingredient and briefly knead into a dough.

2.Roll the dough out and poke it with a fork. Pre-bake in a preheated oven(at 160-180 C) for about 20 min.

3.While the crust is pre-baking, combine the cheese,semolina, 150 g sugar , 2 egg yolks and the orange rind in a food processor or blend with a handheld blender.

4.Beat the egg whites until they reach hard peak stage and then gradually add the rest(100 g) of brown sugar (powdered).

5.Gently add and fold in the cottage cheese mixture.Add and fold in raisins if you're using any.

7.Pour this light mixture over the pre-baked crust and bake until golden brown and firm to touch.Enjoy hot or cold.
