HOMEMADE CHICKEN COLD CUT


Sausages and cold cuts, two of the all time favourites for kids and adults alike.And who can blame us?They are ready made, easy to use, tasty and make for the perfect snacks on the go, just match it up with your perfect bread and sauces and you're done.But once you read the labels or do your research and get to know about the notorious pink slime they are made of , concerns should override the convenience of it all.In situations as these, it's not enough to just forbid(your kids) their consumption, even if it's for their own good. For a doable long term solution you need to offer alternatives and this recipe is one such alternative that is easy to make, very time efficient and super tasty, not to mention that it looks like the real stuff, so your kids will probably not make the difference but their bodies will.

Ingredients:

350 gm. chicken (cubed,preferably from thigh and leg)

50 gm. grated cheese(optional)

2 small eggs

2 cloves garlic

1-2 spring onions

1-2 green chilies (chopped/optional)

condiments as preferred(I use black salt, pepper, paprika and thyme)

Necessary equipment: one empty aluminium can(420 gm), open on both sides.

Method:

Put all ingredients in a food processor and blend well to reach a fine pasty consistency.

Add eggs and condiments and mix well. (If your food processor is big enough, you may add the eggs and condiments in the first stage)

Line the aluminium can with butter paper and place it upright on your lined baking tray. Fill it up with the chicken mixture making sure that there are no air bubbles left inside.

Bake in preheated oven(180 C) for 35-45 min, until juices run clear. Leave to cool then remove from can and store in refrigerator.
