WHOLE WHEAT PANCAKES


Ingredients:

250 gm. yoghurt (the more acidic the yogurt the better the results)

2 eggs

2-4 tbsp brown sugar (optional)

1-1 1/4 wholewheat flour (atta) or 1 cup whole wheat flour+1/4 cup wheat fibre (bhusa)

1 heaped tsp baking soda

optional flavouring (cinnamon powder, vanilla essence, orange rind etc.)

Method:

1.Put the yoghurt and eggs in a bowl and whisk until smooth, add sugar and baking soda(and flavouring), mix to combine.

2.Add 1 cup of flour and mix to get rid of lumps.Check the consistency by lifting your utensil above the bowl and letting the batter fall, it should drop, not pour.If it pours, add the extra amount of flour.Leave the batter to rest for 10-15 min.(I usually use it right away, but that’s just me…)

3.Slightly grease your frying pan and heat it up on a low to medium flame.Pour some batter and spread it with a spoon.When it bubbles up flip it and cook it for another minute or so.

Voila!

Tasty, light, fluffy, low fat, wholewheat pancakes.What more could you want?!

VARIATION: You may add fruits or nuts while pancakes are cooking for extra texture and taste.
